Cabbage & Potato Soup

It is a love hate relationship at our house with cabbage. I adore it when cooked correctly. The husband won't try it. The daughter, well there is no telling what she will demand .
Healthy, super easy and quick lunch. Or for dinner tonight in our case since the hubby is gone.
And we had a meeting during dinner.


1/2 head of cabbage

1 large potato

1 can chicken broth

2 cans water

1-2 chicken bouillon cubes

salt & pepper to your liking


Chop the cabbage and potato


Mix all ingredients and boil for 20 minutes or until cabbage and potatoes are soft. Place veggies in a blender with some juice. Blend and return to pot. Simmer for a few minutes.


If you are a cabbage fan, you will enjoy this quick and easy soup.
I of course add a lot of butter.

  1. I like raw cabbage, really thin, as a salad. I'm still iffy when it's cooked. Kevin loves it though.

    I have the pork carnitas almost ready. They've been cooking since 5 pm yesterday. Just checked the meat and it's totally falling apart and smells heavenly! :)
