Slower Cooker & Snow Days


We woke to much more snow than expected.
Much more.
It was pretty powdery snow, not slick ice.


I knew it was going to be a matter of time before the little one wanted to go out and play.


Breakfast.
Pancakes.
Eggs...eggs cracked on the floor.
Turkey Sausage.
Turkey Bacon. NOT real bacon.
Lots of hot chocolate.

A little cartoon, Princess tent time.


We bundled up in our snow gear and headed out.

But not before I put our dinner in the slow cooker.
It smells so lovely.
Our slow cooker cooks entirely too fast.

I got this recipe from my good friend Toni who makes it often for her husband.
She found it on this great blog.
I know her precious twin girls will be eating it in a matter of time.

Here's what you need:
2 pork tenderloin about 1 pound each
1 jar salsa Verde (green salsa)
1 can chopped green chiles
1 can rotel
1 onion chopped in large pieces
Cover in Crock pot and cook on low (or on warm if your slow cooker cooks too fast) for about 10 hours or until the pork falls apart easily.
Serve buffet style with cheese, lettuce, tomatoes, sour cream, cilantro, and avocados.
